Rhubarb gin belongs to the Polygonaceae (meaning “many-angled plants”) family, which includes sorrels and other plants known for their oxalic acid content.  Spreading rhubarbs grow easily in temperate zones, despite their sour tendencies. They often require a stain to grow upright.

Rhubarb gin is a good source of antioxidants as well. And what’s not to love about this tart and sweet vegetable? According to Food.com, rhubarb is:

Why Make Sugar Syrup From Rhubarb? According to Food.com, sugar syrups “can be used in dishes like ice cream, pancakes and waffles as well as in cakes and pies.” They make everything taste better! Plus they’re really easy to make. Here’s how you do it: 

First, start by cutting up the rhubarb into small pieces. You don’t want it too big. Then place the rhubarb pieces into a saucepan with some water and bring to a boil over medium-high heat. Cook for about 10 to 15 minutes. If it isn’t quite ready, continue cooking for a few more minutes.

After the rhubarb is cooked, remove it from the heat and strain the liquid, which should be a deep shade of green. Add 1/2 cup light brown sugar and bring syrup to a boil over medium-high heat.

Allow the juice reduction to cool. Remove the remaining pieces of cooked rhubarb. You can also make your own powdered rhubarb instead of using simple syrup.

Add the sugar

1 cup granulated sugar

1/4 cup cornstarch

1-1/2 cups rhubarb, chopped (about 8 ounces)

1 tablespoon butter or margarine

Pinch of salt

Instructions: In a medium saucepan over medium heat, cook the rhubarb gin and sugar together until the rhubarb is soft and the sugar is melted. Remove from heat and stir in the cornstarch. Add butter or margarine, if desired. Stir in salt. All ingredients in bowl of electric mixer, starting with 1/4 cup and adding additional granulated salt in table-spoonful increments. The mixture looks like being similar to ordinary crumbs.

Ingredients: 

-1 ¾ cups sugar

-1 teaspoon vanilla extract

Instructions: 

  1. In a medium saucepan, combine the sugar and vanilla extract. Stir until the sugar dissolves. Add the rhubarb, and bring the mixture to a boil over medium heat. Bake until rhubarb gin is tender, about 10 minutes.
  2. Remove the pan from the heat, and let the contents cool slightly. Serve warm or cold. 
  3. Rhubarb  Cook on low heat until thick, stirring occasionally.

Ingredients: 1/2 lb. rhubarb, cut into 2″ pieces

1 cup sugar

Instructions:

1. In a large pot, combine rhubarb and sugar and simmer on a low heat for about 15 minutes.

2. Remove from heat and let cool.

3. Enjoy!Cool slightly then refrigerate over night to thicken in place of sugar and wate

-1 lemon, juiced

Combine rhubarb, sugar, and water in a medium saucepan over medium heat. After boiling, reduce the heat and simmer for 15 minutes. Remove from heat and let cool slightly. Squeeze the lemon into the syrup and stir. Refrigerate the sugar and water overnight to thicken.
