This high setting cooks food quickly by giving it direct exposure to hot air, which helpsactivate browning reactions and intensify flavours. However if you have an electric convection oven or one with fan forced air, the heating element is turned up higher—usually around 500°F (260°C)—to circulate hot air more evenly throughout the oven.
In order for your cake to rise nicely it needs three things. flour sugar and eggs. Flour helps trap moisture which is then released when baked resulting in a nice fluffy cake. Sugar helps produce steam which leavens the batter (fun fact: carbon dioxide bubbles
In a medium bowl combine 1 egg white, 1/4 cup sugar and 1/4 teaspoon salt. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat 1 cup (2 sticks) unsalted butter at medium speed until creamy. Add 2 cups all-purpose flour and beat until combined. Scrape down the sides of the bowl. Add 2 teaspoons vanilla extract and beat until evenly distributed.
With the mixer on low speed, add 1/2 cup milk and beat until just combined. Increase the speed to medium and beat until a soft dough forms, about 2 minutes. Stop beating and drop the dough by rounded tablespoons onto a lightly floured surface. Flatten into a disk shape.
Use your hands to press down on the dough to form an 8-inch-wide cake ring. Transfer the ring to a baking sheet and bake at 350 degrees F for 10 minutes or until golden brown. Let cool on the baking sheet for 5 minutes; remove to a wire rack to cool completely.
In a large bowl, whisk together 2 eggs, 1 cup (2 sticks) unsalted butter, 1 cup granulated sugar and 1 teaspoon vanilla extract. Beat well until light and fluffy
Mixing cake batter: How long is it good for?
Mixing cake batter can last in the fridge for up to 3 days or in the freezer for up to 2 months. Before you freeze, use water in a small microwave-safe bowl and heat it on “stir”. It should be warm but not too hot (any hotter than body temperature). Consider microwaving the cake batter in 2 portions.
First for 90 seconds to get it warm and again for 1 minute before pouring all the batter into your pre-chilled cake pan or cupcake tins. This will help each batch of batter I regularly produce as I do between eight and 10 batches every month of all manner of recipes ranging from quick muffins to stir-fry, samosa recipe etc; this saves me time rather than have to make them separately.
